Guar Gum

Guar Gum is derived from the ground endosperm part of the seed of the guar plant, Cyamopsis tetragonolobus, of the Leguminosae family. The plant is cultivated commercially in India and Pakistan. Roughly 14% to 16% of the seed is hull, 38% to 45% represents endosperm and 40% to 46% is germ. In commercial processing of Guar Gum, different methods are utilized to efficiently separate the guar endosperm from the hull and germ. The separated endosperm, containing 80% galactomannan, is ground to a fine particle size and sold as Guar Gum.

Guar Gum will disperse and swell almost completely in cold or hot water to form a highly viscous sol. Guar Gum sols have a buffering action and are very stable from pH 4 to 10.5. Guar Gum is a nonionic polymer compatible with most other plant hydrocolloids as well as carbohydrates and proteins.

Guar Gum is primarily used to thicken aqueous solutions, and control the mobility of dispersed or solubilized materials. The water-binding characteristics of Guar Gum makes it ideal as a rapid hydration agent in the formation of viscous colloidal sols. It is versatile as a thickener, viscosity modifier, stabilizer, and binder.

There are several grades of Guar Gum available based on different viscosities and particle size.
